Zafrani Pulao or Sweet Saffron Rice is a delicacy made using rice, saffron, sugar and dry fruits and is served hot.
Ingredients
- Long grain rice (Basmati rice) – 2 cups
- Almonds – 20
- Cashew nuts – 12-15
- Ghee – 4 tbsps
- Saffron – a pinch
- Yellow food coloring – a pinch
- Rose water – 1 tsp
- Nutmeg powder – 1/4 tsp
- Green cardamom powder – 1/2 tsp
- Sugar – 1/2 cup
- Milk – 1/2 cup
- Raisins – 25-30
Directions
1. Wash rice twice and soak in just enough water to cover it for 30 mins. Drain excess water.
2. Mix milk, food coloring, saffron and rose water in a bowl and keep aside.
3. Place cashew nuts in a flat microwave dish and cook, uncovered, on Microwave MEDIUM (70%) for 5 minutes. Halve the cashew nuts.
4. Place almonds in a small glass bowl with half a cup of water. Cook, uncovered, on Microwave HIGH (100%) for 3 minutes. Drain, peel and slice almonds.
5. In a deep casserole, mix ghee and rice and cook, uncovered, on Microwave HIGH (100%) for 2 minutes. Stir. Cook, uncovered, on Microwave HIGH (100%) for 2 minutes more.
6. Mix nutmeg powder, green cardamom powder, raisins and sugar into the rice.
7. Add the mixture of milk, food coloring, saffron and rose water to the rice.
8. Add three and a half cups of water to the rice and stir once.
9. Cover and cook on Microwave HIGH (100%) for 15 minutes. Allow standing time of 5 minutes.
10. Garnish with almonds and cashew nuts. Serve hot.
Recipe Tips
- You can avoid use of food coloring and rose water and rely solely on saffron for the color and aroma of the dish.
